Ingredients:

    • 2 cans of vegetable or chicken stock

 

    • 1 roughly chopped onion

 

    • ¾ pounds of crab meat (you can also use pork or chicken fillet)

 

    • 1 pound of spinach, or callaloo leaves

 

    • 6 tablespoons of shallots, minced

 

    • 3-5 garlic cloves, minced

 

    • 9 ounces of okra

 

    • 2 tablespoons of shredded young coconut

 

    • ½ cup of coconut milk

 

    • Green chili pepper

 

    • ½ teaspoon of ground black pepper

 

    • ½ teaspoon of salt

 

Preparation:

  • First, take off the stems of the callaloo leaves, and then give them a rough chop.
  • Place the leaves into a saucepan.
  • Slice your meat into thin strips.
  • Prepare the shredded coconut.
  • Cut the okra and chili pepper into fine pieces.

How to Cook Caribbean Callaloo Soup

  • Heat a tablespoon of olive oil in a large pot over medium heat.
  • Mix in the shallots and the onion, until softened.
  • Stir in the coconut milk, vegetable stock, and garlic.
  • Add in the meat after a minute, then cover up the pan and wait for two minutes, until the meat is tender.
  • Start boiling your soup while adding in the okra, callaloo leaves, and chili pepper. Lower heat, and simmer for 35 minutes while the pot is covered.
  • Remove the chili pepper afterwards. Then transfer your soup into a food processor, and turn it into a fine puree.
  • Reheat your soup in a microwave, before adding some seasonings.
  • Garnish your soup with shredded coconut.
