Ingredients:

  • 4 pieces of spring onions, chopped (white part only)
  • 4 chopped garlic cloves
  • 3 chopped scotch bonnet chilies
  • A small chopped onion
  • ¼ cup of brown sugar
  • 1 tablespoon of thyme
  • 1 tablespoon of allspice
  • Salt to taste
  • ¼ teaspoons of nutmeg
  • 1 teaspoon of cinnamon
  • ½ of vinegar
  • ¼ cup of soy sauce
  • ¼ cup of lime juice
  • ¼ cup of orange juice
  • ¼ cup of vegetable oil
  • Two chickens cut into eight pieces each
  • A tablespoon of black peppercorns

  • Crush allspice and peppercorns together. Do this until they turn into fine powder.
  • Use a food processor to add thyme, garlic, nutmeg, cinnamon, onion, spring onions and chilies to the mix. Blend until it turns into a fine puree.
